Story & Mission
Ciao, we are brothers Henry and Cesco Amodio, along with our great friend Tommy. In 2020, we set out to produce the freshest, most sustainable, and highest quality fior di latte mozzarella and ricotta in the UK.
After months of visiting and consulting with fantastic mozzarella productions in Naples, Andria, and Trentino, we sought to find a dairy to partner with in the heartland of UK dairy farming: Somerset.
To create the best quality and freshest mozzarella and other traditional Italian cheeses, you need to be as close to the source of milk as possible. In 2021, we started building Caseificio Fratelli Amodio within the grounds of the family-run and sustainable farm, Chew Valley Dairy.
This has allowed us to be within 3 miles of all our milk, receiving the best quality produce, fresh every day, no more than 9 hours after milking.
