We craft a variety of pasta filata cheeses, including by-products from our production. Pasta filata, characterized by cooked and stretched curd, is a crucial element in the making of mozzarella, giving its distinctive texture and smooth appearance.
Mozzarella
Made using whole milk and vegetarian rennet we offer the freshest fior di latte you can buy in the UK. Our fior di latte is produced daily using fresh milk from Chew Valley Dairy 3 miles away!
We keep a very close eye on the fat content of our milk meaning we can guarantee a consistent smooth, creamy fresh product that is both perfect for eating fresh or used on pizza. By ensuring we have the right fat content and produce only within the correct pH parameters, our mozzarella will always have the perfect melt and limited burning, meaning your pizza will always look perfect.
Ricotta
Limiting waste in food production is so important and we are very fortunate to have the ability to process our whey into ricotta, one of the finest Italian cheeses.
We produce ricotta daily only using the whey from that days production. Our ricotta is smooth and creamy and is perfect to be used in both savoury or sweet dishes.
Buratta
Our burrata is light, creamy and not overly decadent. We only make our burrata by hand and to order for local customers. Making burrata is a true art and a cheese where our Casari can really show off their artisanal flair. We want to make it accessible yet exclusive due to it being a handmade product.
Stracciatella
We make our stracciatella using excess pasta filata we have during the mozzarella making process. Similar to our burata we make our stracciatella to order meaning you always get it fresh. We shred our pasta filata by hand and then mix it with cream to produce what we think to be the silkiest cheese on the market.
